How long have you been working at Oatlands Park Hotel?

How did you get into the industry?
I was driven by hunger to become a chef at a very young age. After I left college at the age of 18, I studied in Holland and completed a 5 year apprenticeship to become a chef.
What has been the highlight of your career?
There has been many, but a particular highlight was when the restaurant at the time I was working at, was voted the best new restaurant in London in 1997. I was working as the opening head chef for the restaurant and considering there is over 17,000 restaurants in London, it was an amazing achievement.
What is your favourite dish to cook?
I do not have a favourite dish or favourite cuisine, but I love to cook with fresh ingredients. If you have good quality fresh ingredients, making a dish stand out then comes down to love, care and attention.See all news
